This recipe makes 350 - 400 grams of Hot & Spicy Sauce.
Will last up to 1 year refrigerated.
INGREDIENTS
1 lb. Sweet Seasoning Peppers
½ lb. Scotch Bonnet Peppers
¼ lb. Bird Peppers (penguin peppers)
1 lb. Italian Oregano
½ lb. Chadon Beni aka Mexican Coriander
1 lb. Spanish Mint
1 lb. Basil aka Petite Bum
1 lb. Grenadian Big Thyme aka Cuban Thyme aka Spanish Thyme
1 & ½ Cloves of Garlic
1 Piece of a Large Ginger
900 ml of Oil
500 ml of Vinegar
INSTRUCTIONS
You will need a blender and a wooden or plastic spoon. Use a large container to keep all the ingredients.
First, wash all the fresh herbs and spices well using cold water.
Next, remove all the hard stems from the fresh herbs and spices only keep the soft leave. Remove the seeds from the peppers, cut and add to the mix. Crush and peel the garlic (wash with cold water before adding to the mix). Peel the ginger and cut into slices to add to the mix.
Add one cup of vinegar and I cup of oil to the ingredients and mix well. Leave in the refrigerator for up to 8 hrs. before blending into a puree.
Before blending: Add 1 & ½ cups of oil and ¼ cup of vinegar of vinegar to the mix. If you need to add more oil or vinegar to blend smoothly, add another 2-3 table spoons in the blender. Blend the ingredients into a puree, pour into a clear jar and refrigerate. This recipe makes 400 grams of hot & spicy sauce. If refrigerated, the sauce can last up to 1 year.

INGREDIENTS
2 cups of Dried Lima Beans (Can beans are okay too)
2 Hot Italian Sausage
2 Mild Italian Sausage
1 Spicy Summer Sausage
4 onions
1 Sweet Pepper Mix – Red, Yellow, Orange (or whatever you have)
8 Fresh Chili Peppers (Dried chili is ok too)
1 Green Onion
A pinch of nutmeg (optional)
2 teaspoons of Salt
1 bay leaf (Optional)
2 cups of Water
INSTRUCTIONS
Soak the lima bean overnight in water. 2 cups of bean with 3 cups of water will do. Alternatively, you can use canned beans.
In a large pot cook the lima beans in 2 cups of water with 2 teaspoons of salt, add the nutmeg and bay leaf to the pot and let it boil on low heat for 30 -40 mins (pre-cook a bit first).
Next, chop all your ingredients (Peppers, Fresh Chili & Onions) & slice the sausages into nice bite size pieces.
Add the chopped ingredients to the lima beans after 40 mins, mix all the ingredients in well. Cover the pot and let it cook for up to 2 hrs. Stir the pot every 30 minutes or so.

Ingredients
1 & ½ cup grated Cheese Mix (Cheddar and Gruyere)
4 tablespoons grated Parmesan Cheese
1 tablespoon of Yeast (Quick Rise)
1 tablespoon of Honey
½ cup of Melted Butter
1 cup of Whole Wheat Flour
1 cup of Luke Warm Water
2 cups broken Whole Wheat Crackers (any cracker)
Toppings for the biscuit - 4 tablespoons grated Parmesan Cheese
Instructions
In a mixing bowl, pour 1 cup of warm water and add the honey, mix well until the honey is dissolved in the water. Add 1 tablespoon of quick rise yeast. Mix well, cover and let it sit until it starts bubbling for 15 minutes or so.
After 15 mins or so, add the melted butter, crackers, cheese mix, and parmesan cheese. Mix the ingredients well. Add the whole wheat flour 2 tablespoons at a time until there is ¼ of the flour left approximately.
(The rest of the flour is used knead the dough after it rises).
Knead the dough into a disc, cover with plastic wrap and let it rest for 1 hour. After 1 hour, dust with flour, and roll out by hand into mini balls before turning them into flat biscuits.
OVEN INSTRUCTIONS
Preheat at 350 degrees
Bake 325 degrees for 40 - 45 mins

Soft Blue Berry Biscotti Style Pastry
Lightly sweet, soft blue berry pastry, great with coffee or tea.
Ingredients
2 cups of Flour
1 tablespoon of Quick Rise Yeast
1 & ½ cups Blue Berries (Dried or Fresh)
¼ cup of Sugar (or less)
1 teaspoon of Vanilla Essence
½ cup of Butter (Room temperature)
A pinch of Salt
1 cup of Hot water
½ teaspoon of Ground Cinnamon
1 teaspoon of dried grated peel mix (Orange, Tangerine, Lemon & Lime peel)
Dry Mix
The flour, salt, mix peel and two teaspoons of sugar is mixed together. Then you add the room temperature butter to the mix. Using you fingers, mix the dry ingredients and the buttery until it’s silky and smooth. Make sure all the butter is thoroughly melted and mixed with the flour. Create a hole in the middle to add the yeast mix later.
Rehydrate the Blue Berries
Rehydrate the dried blue berries with hot water for 15 -20 mins. Drain the water and keep that water for the yeast mix. The blue berries should be placed in a pot with a couple of teaspoons of sugar to cook on the stove top on medium heat. Cook this for 20 minutes, add 3 – 4 teaspoons of sugar and a table spoon of water and let it simmer.
Wet Mix
Take the water from the blue berry and add 1 teaspoon of sugar. Mix well until it’s dissolved fully. Add 1 table spoon of yeast and mix well. Cover the yeast mix and let it sit for 15 mins. When it’s start making bubbles at the top, add to the dry ingredients. Add to the whole in the dry mix.
Mixing the Dough
Using a fork, mix the ingredients until most of the liquid it fully gone. Then using your hand to knead the dough into a disc. Leave it to rise for 45 mins – 1 hour. After 45 mins -1 hour, cut into two pieces to roll out or roll out and cut into two later.
Dust the counter with flour and spread the dough on the counter with a Rolling Pin. Stretch out as to ¼ of an inch or thin enough that it’s not fragile like phyllo but not thick as pizza. Add the blue berry mix, spread evenly on the dough. Slowly roll up the dough, folding the edges as you roll.
Place on a baking pan and let it rise for another 45 mins to 1 hour, then bake.
OVEN INSTRUCTIONS
Preheat at 350 degrees
Bake 325 degrees for 1 hour

INGREDIENTS
2 cups of Whole Wheat Flour
1 cup of warm water
1 table spoon Quick Rise yeast
¼ teaspoon Molasses (1/2 teaspoon of Sugar if you don’t have these two ingredients)
½ teaspoon of Nutmeg Jam (Any other Jam would do)
1 cup of butter room temperature (or margarine if you prefer)
1/3 teaspoon of salt (or A pinch of salt)
PREPARATION
Wet Ingredients
Dissolve the Nutmeg jam and molasses into the warm water. You can remove any lumps with a strainer. If you don’t have these ingredients, use any jam or sugar. Molasses and Nutmeg Jam gives the bread a lovely fragrant with a hint of sweetness when you smell the bread. This will not make the bread sweet tasting.
Dry Ingredients – Yeast added to the dry ingredient
In a large mixing bowl add all the dry ingredients and the butter, use your fingers to get the butter mixed thoroughly mixing in with the flour salt and yeast. It should feel a bit silky with the butter is completely melted through.
Form a whole in the middle of the flour, and pour the warm water mix into the middle. Use a fork to mix the wet and dry ingredients until it starts forming a dough.
Use your hands to knead the flour for 4-5 minutes, form in a disc and let it rest for 20 mins. Cover with plastic wrap, towel and black bag. It will double in size quicker. You can knead it again for 2-3 minutes and place into the bread pan to rise for another 45 mins - hour before baking.
Baking & Oven INSTRUCTIONS
Preheat at 350 degrees
Bake the bread at 350 degrees for 20 – 25 minutes Then bake it for another 30 -35 minutes at 350 degrees.
Let it cool down before slicing.

½ of a small Onion (Chopped)

2 Medium Potatoes cut into cubes
¼ - ½ cup Water

1 table spoon West Indian Hot Sauce (Any hot sauce)
OPTIONAL PREPARATION – Put all the ingredient into the cast iron pan all at once and let it cook for 45 mins at 350 degrees in the oven.
PREPARATION AS PER THE VIDEO
Create a mix with the crushed garlic, dried parsley and olive oil ahead. A few hours ahead will do. Add that mix to the potatoes and leave for a few hours to absorb the marinate.
In a baking pan or pot, cooked the potatoes for 20 minutes. You can use butter or fat (in this video, beef fat is used). After 20 -25 mins add the beef cubes and the veggie mix to the pot and let it bake for another 20 -25 mins.
Oven INSTRUCTIONS
Preheat at 350 degrees
Bake the potatoes 300 degrees for 20 – 25 minutes. Add the beef and veggie mix, then bake for another 20-25mins.

1 cup of Luke warm Apricot & Tangerine Juice mix
1 table spoon Quick Rise yeast
1 & ¼ cup of butter room temperature (or margarine if you prefer)

PREPARATION
Wet Ingredients – Yeast is activated before adding to the wet ingredients
Dissolve 1 table spoon quick rise yeast into 1 cup of warm apricot and tangerine juice. Cover and let the yeast begin to create bubbles. Within 5 – 10 minutes, add the yeast into your dry ingredients.
Dry Ingredients
In a large mixing bowl add all the dry ingredients, 2 cups flour, 1/3 teaspoon salt, and 1 & ¼ cup butter. Use your fingers to get the butter mixed in with the flour and salt. It should feel a bit silky with the butter is completely melted through.

Sea Moss Preparation
Soak 150 grams of dried Sea Moss for 3 hours in 2 cups of water. Squeeze the juice of 1 Lime or Lemon into the water with the sea moss. This rehydrates the sea moss and remove some of the fresh smell.
After 3 hours of soaking – Boil the sea moss for 10 minutes.
Boiling 150 grams of sea moss (Irish moss) in 2 cups of water for 10 minutes.
Add 1 teaspoon of Cinnamon, a small piece of lime peel, a small piece of orange peel, and 1 bay leaf to the water and let it boil until it forms a gelatin. (NOTE - You can keep the rest of the unused gelatin in the refrigerator for up to a month).

0.5 liters of Sea Moss (Irish Moss) Gelatin

WING MARINATE - 2 - 3 lbs. of Chicken Wings marinated overnight with minced Garlic, Onions, Red and Yellow Sweet Peppers, Salt and Pepper.
WING SAUCE INGREDIENTS
1 Sweet Mango
½ of a fresh Lemon (Juice only)
2 Garlic Cubes
1 teaspoon of Tamarind Paste
1 table spoon of Molasses
Cook the ingredients on the stove top on very low heat for about 1 hour.
The sauce will have a thicker consistency, very similar to homemade jam. Put aside some for dipping and the rest can be tossed with the wings after 40 - 45 mins of grilling.
OVEN INSTRUCTIONS
Preheat the oven on high – 30 mins
Grill the wings on both sides – 20 - 25 mins each side. After adding the sauce, you can grill for another few minutes.

The recipes are written while editing so the measurements are not always exact.
INGREDIENTS
2 marinated Chicken breast chopped into cubes
1 Onion chopped
1 Garlic Clove grated – or whole
½ a Red Pepper chopped
4 Green Onions chopped
1 bunch of Thyme leaves
1 teaspoon Salt
1 table spoon Sour Cream (cream, or Milk) – OPTIONAL – The sour cream was already expired so it works perfect in the soup made in this video.
2 cups of Water
In a crock pot, cook the onions for a few minutes in the butter before adding the chopped peppers, green onions and grated garlic. Cook the mixed ingredients in the butter for 5 – 10 minutes. Add the chicken cubes, mix well then cover and cook for 12-15 mins. Add the thyme leaves mid way.
After 15 mins or so, add 2 cups of water and 1 table spoon of sour cream (optional). Cover and let it cook on very low heat up to 4 hours.

1 chopped Green Onions

Add a pinch of Black Pepper
A teaspoon of Dijon Mustard
2 – 3 table spoons of Mayonnaise or Salad Dressings
Mix all the ingredients well.
INGREDIENTS FOR THE COLESLAW
¼ grated Granny Smith Apple – or any green apple
¼ grated Carrot (large carrot)
A small portion of Cabbage cut in very thin slices – twice the amount of the two previous ingredients.
1 table spoon of Oil
¼ teaspoon of Salt
2 table spoons of Mayo or Salad Dressing
Add a pinch of Black Pepper
Add a pinch of Lime Juice
Mix the salad well.
OTHER INGREDIENTS
2 Pretzel Bun cut in half
4 slices of Emmental Cheese

INGREDIENTS
1 - 1 ½ marinated Chicken Breast cut into small pieces
1 table spoons of Sour Cream
1 table spoon of Plain Cream Cheese
1 - 1 ½ table spoon of oil
1 pack of Phyllo Butter Pastry
1 egg & 1 teaspoon cream whisked together to cover the top. You can use eggs only, oil and eggs, oil and butter or none.
INSTRUCTIONS
Cook the chicken on the stove top for 4-5 minutes on high heat. Roll out the pastry dough cut each dough into 6 even pieces.
Put a portion of chicken unto a piece of dough, close into a pocket, cover with egg mix and place on the baking pan. Pre-heat the oven at 350 degrees and bake at 325 degrees for 45 - 50 mins.

INGREDIENTS
1 cup of Lima Beans (Soak 24 hrs. ahead)
1 cup of Water
½ cup of Cream
1 Marinated Chicken breast cut in Cubes
1 Bay Leaf
A pinch of Chili Powder
A pinch of Sumac Spice
A pinch of Asiago Cheese
A pinch of 5 yr. Old Gruyère Cheese
A pinch of Emmental Cheese
INSTRUCTIONS
Cook chicken breast for 2-3 minutes in a frying pan on high heat with little oil. Use a crock pot to cook the beans on the stove top, add 1 cup of water, ½ cup of cream, 1 bay leaf (optional) a pinch of chili powder, & a pinch of sumac spice.
Cook the bean for 35 minutes, then add the chicken to the crock pot, place the cover on the pot and continue cooking. After 5 minutes of cooking on the stove top, Add the cheese mix to the pot and mix well.
Place the cover on the crock pot and place it into the oven to cook for 45 – 50 minutes.

Wash Chicken in very cold water. Next, add 2 table spoon salt or lemon juice in a large bowl of water. Leave the chicken breast to in the mix for 7 – 24 hours. Rinse the chicken with cold fresh water well before add the marinate mix.
INGREDIENTS FOR 6 CHICKEN BREAST:
6 Boneless Chicken Breast
2 Large Onions
4 Garlic
1 Sweet Pepper
1/4 teaspoon Grounded Black Pepper
1 table spoon of Salt
A pinch of Thyme (small leaves)
1 Grenadian/Cuban Thyme leaf
Finely chop or use an electric grinder to prepare the marinate mix.
Using the tip of a sharp knife, poke some small whole in the chicken breast. Add all your ingredients and mix well.
Leave to marinate 3 – 24 hours for the best results.
