Salt Encrusted BBQ Fish Thailand, beautiful street food vendor
Nothing beats salt encrusted BBQ fish slow cooked over hot coals. This beautiful girl starts work early in the day catching or sourcing freshwater fish. She sets up her cart on the street market of Chiang Rai in Thailands north. Once the coals are hot and perfect she starts to cook. The fish are very popular and it's not long before she is sold out. The fish come with fresh green salad and a spicy sauce. you tear off some lettuce and load it up with herbs and the BBQ fish, topped off with the naam jim sauce its a taste sensation.

Coconut milk extraction process
It all starts in the dark early hours when the coconuts are delivered to market. Here they are de-husked and then peeled before being ground into fine particles and sent thru the press. The first squeeze produces the creamiest coconut milk and the second a more watery milk. Curry paste and coconut cream are the basics of many Thai dishes and the two ingredients are often found along side at the local markets. This market was in Chiang Rai, in northern Thailand.

Making Thai Super Crispy Rolls
hese crunchy tasty treats called Tong Muan or crispy golden curls are easy to find as they are one of the most popular snacks with locals and tourists alike. I love watching the whole process. They are a sweet crunchy treat made from coconut, rice flour, palm sugar, tapioca and egg. The coloured pieces are pandan and sesame.
These are so worth trying, especially if you have young children as they will love these.

Pineapple cutting, Bali Beach Fruit lady
Balinese fruit vendor shows how to cut and remove the eyes of a pineapple. She patrols the beach in the heat all day carrying up to 10Kg on top of her head. They are beautiful people and so happy to make a sale. The fruit quality was perfect and hygienic. As I sat to eat the fresh pineapple I was chatting to her and she told me she doesn't make too many sales in a day so if you see the fruit vendors at Kuta beach, let them prepare a fresh pineapple or melon for you as you bask in the sun.

AMAZING RETRO STREET FOOD MACHINE THAILAND - Taiyaki
Taiyaki is originally from Japan but seen quite often in the Thai markets. Made from a variety of flours and sweet fillings of bean paste and pandan jam. A sweet pancake type of food, shaped like a fish. Kids will love these.

Rice noodles are serious business in Thailand. Chiang Rai churns out the most amazing rice noodles and I was lucky to visit the local noodle production line. These noodles are used with curry and salad and locals from villages all around come here to buy.

Quail eggs are often sold on the street and at markets around Thailand. A great snack and many parents pull up with their kids aboard their motor bike to buy these to share. A great snack anytime.

Square Butter Crispy Pancakes
Saw this really cool crispy snack at a street market in Chiang Rai. Never seen this one before but was very popular with the locals and tourists. Made from milk, sugar and butter. The heating process is important hence all the smoothing out of the batter. Butter and sweetened condensed milk is added and then cooked to a perfect crisp. These guys would make great plasterers! Very interesting street food indeed.

ONE OF THAILANDS OLDEST STREET FOODS
This Street food vendor has been in the same spot in Chiang Mai making these snacks for generations. It is very well known and people come from all over the city to buy these amazing treats. The main ingredients are rice flour, tapioca flour, and arrowroot flour. The filling is a spiced minced pork. Its such a wonderful sight to see this family working away each day with steam shooting out of the pots. I had to taste of course and they are exceptional, great for kids too as not spicy.

Brittle Pancake
A very old Thai street food loved by children and the elderly. It's made from rice flour, palm sugar and cooked over hot coals. The Thais call it khaw keinb waw. It cooks rapidly and expands into a sweet giant crisp.The cooking process is the secret here and some delicate handywork is required. It's very brittle so you need to be careful handling this one. Can also be used to keep the rain off your head, lol!

One of Thailands Oldest Street Foods - KANOM FAK BUA TOEI
This is a very old street food desert not seen that often. I was lucky to find this at a market in Sakon Nakhon Thailand. It is made from flour and rice flour, coloured with pandan and is slightly sweet. It has a unique subtle herb flavour, I found it delicious. Street Food in China
Guangzhou has an amazing street food scene. I took a walk around Canton Rd area and checked out some great vendors there. I found some wonderful fruit vendors and tea shops with some very good produce. Im really loving the vibe this wonderful city has to offer and can't wait to check out some more locations.

Splitting Massive Coconuts
Some huge coconuts being opened with very nice knife skills in this coconut stand that is a local favorite. Surprisingly all the workers had all fingers at last count. Had to try these giant coconuts, not as sweet as young Thai coconuts but very nice and on a hot day in Luang Prabang nothing beats a fresh coconut.

Popcorn Kart Koh Samui
The two wonderful street popcorn venders have perfected the most amazing popcorn. They are open every day and sell around 100 bags every day. The bags sell for 20 baht each (around 60 cents US). This is constant work as cars pull up to buy and the speeding traffic is relentless and passes sometimes less than a metre away. You can find them heading north about 3 kilometres from SeaTrans jetty on Koh Samui Island Thailand

Pineapple Village
These are some of the tastiest pineapples in Thailand. They are small to tiny compared to a regular pineapple and called Phulae. The taste is sweet with crunchy texture. The fruit is seen at many street food stalls around the country and best served on ice.
The beautiful people at the village of Ban Pong Phrabet in the north of Thailand come together to harvest and process the baby pineapples from the surrounding hills. Once the freshly harvested pineapples are delivered to the village the cutting starts and expert hands make short work of the many tonnes of the golden fruit delivered daily. The pineapples are grown on the slopes of the surrounding hills and its tough work trekking amongst the dagger like leaves in search of these babies. Once processed they are packed then iced and sent by truck into Laos on their way to China. The whole village revolves around the growing and export of this wonderful fruit.

TODDY PALM, How to open Asian Palmyra Fruit
Bumped into a villager at the market in Krabi Thailand. He was selling a heap of fresh toddy palm or Palmyra fruit. It's the fruit from the Palmyra Palm and is used in many Asian sweets. He kindly showed me how to open these and gave me a sample of the fruit. And yes he still has all his fingers. The top portion of the fruit must be cut off to reveal the three sweet jelly seed sockets, translucent pale-white, similar to that of the lychee but with a milder flavor and no pit. The jelly part of the fruit is covered with a thin, yellowish-brown skin. These are known to contain watery fluid inside the fleshy white body.

OPEN DURIAN 2 WAYS
Durian is the "fruit of Kings" its smell is pungent at times. Most hotels will fine you if you bring the fruit into your room. I really enjoy durian now, its definitely an acquired taste. I found 2 vendors selling and opening durian in two different ways. I think the first way is much better, what do you think?

PRESSED SUGAR CANE DRINK
This is very popular in Thailand, It's so worth a try if you see this. Nothing beats the fresh sweet taste of chilled sugar cane juice. If you have been walking around a market and you stumble across this vendor, stop and support them, its so refreshing.

ROTI SAI MAI, Thai Street Food Cotton Candy in Roti
This guy was so talented, I was watching his sequence and he never missed a beat. Roti Sai Mai is not seen too often around Northern Thailand, its very common in Ayutthaya. A sweet palm sugar floss is rolled inside the roti and it is a wonderful treat. Roti sai mai known as Ayutthaya's cotton candy is originally from India and the Thai's have adapted the recipe.
