Oxidation can significantly reduce the shelf-life of your stored foods. Oxygen can be removed from dry goods using an oxygen absorber or vacuum sealing. Carrots are incredibly easy to grow. You can eat them fresh and overwinter them in the garden bed if you cover them with a thick layer of mulch or leaves. We overwintered these and harvested them in April when they were incredibly sweet. We freeze-dried them and now we can enjoy those carrots for up to 25 years.
