About Kachori
Kachori is a spicy deep-fried snack, originating from the Indian subcontinent, and common in places with Indian diaspora and other South Asian diaspora. Alternative names for the snack include kachauri, kachodi and katchuri. In Delhi it is often served as chaat. Delhi also has another kind of kachoris, called 'Khasta kachori' or 'Raj Kachori', Moth Kachori, 'was (fast) kachori, made with potato, coconut, and sugar. Kachoris are often served with a chutney made from tamarind, mint, or coriander. Another type is fried and stuffed with pulses (urad and moong especially) and is generally found in the Kutch region of Gujarat. Some of the variants in North India include a version similar to the Rajasthani one, accompanied by a curry made of potatoes and varied spices or even chana (chole) similar to one served in chole bhature. |

Chocolate Cheesecake | No Bake Cake Recipe | Divine Taste With Anushruti
Watch how to make Eggless Chocolate Cheesecake, a mouth watering recipe by Anushruti.
Here is a guilt trip down the chocolate cheesecake lane. Sinfully sweet and easy to make, no bake chocolate cheesecake, which you should definitely try for this Christmas. It is amazingly sweet and serves best to satisfy the chocolaty craving of chocolate addicts!
Note : You can either make this in a deep dish 8″ springform pan or a 9″ regular pan. Garnishing is optional and you could leave it plain, sprinkle some grated chocolate over it or make some pretty decorations.
Ingredients:
For the base:
- 125 gm (8 large or 10 regular) digestive biscuits
- 1 tbsp cocoa powder
- 60 gm (1/4 cup) butter at room temperature
For the cake filling:
- 5 gm agar agar or chinagrass
- 250 ml (1 cup) water
- 500 gm (2 cups) mascarpone cheese
- 160 gm (1 cup) icing sugar or confectioners sugar
- 200 gm (3/4 cup) thick yogurt
- 1 tbsp pure vanilla extract or vanilla paste
- 250 gm dark chocolate (1 1/2 cups) chopped or semi sweet chocolate chips + 2 tbsp butter
Method:
Prepare the base:
- Place the biscuits in a zip loc pouch, seal and with the help of a rolling pin, crush the biscuits to a fine powder. Alternatively, process the biscuits in a food processor until they turn into a fine powder.
- Put the biscuit powder in a mixing bowl, add the cocoa powder and the room temperature butter and mix with your finger tips until the mixture resembles bread crumbs and the butter is well mixed into the biscuit powder. Alternatively, make this in a food processor.
- Press this mixture over a the base of a deep 8” (20 cm) or regular 9” (23 cm) springform pan or a pan with a detachable base.
- Refrigerate for half an hour or place in the deep freezer for 10 min.
Prepare the filling:
- If the china grass is in bars, process it into flakes in a blender. Place the chinagrass in a bowl of water (1 cup, 250 ml) and allow it to soak while you prepare the other ingredients for the filling.
-In a large bowl or the bowl of a stand mixer if using one, beat the mascarpone, sugar & yogurt until smooth and creamy, with a wire whisk or a hand blender or the paddle attachment if using a stand mixer. Stir in the vanilla, mix well and keep aside.
-Melt the chocolate with the butter in a double boiler. Allow to cool slightly and then slowly stir it into the mascarpone mixture and mix well.
-Place the chinagrass with the water and allow it to melt, stirring all the while, over a low flame. Once it melts completely pour it over a strainer into the cheese-chocolate mixture, stirring the cheese mixture all the while.
-It is important to keep stirring the cheese mixture as china grass sets very fast and we need to prevent the formation of tiny lumps.
Immediately pour the prepared mixture into the prepared crust.
-Allow to set in the refrigerator for 3 to 4 hours before serving.
Garnish with grated chocolate if desired.
Makes one deep 8” or regular 9” cheesecake.

About Ragi
Eleusine coracana, or finger millet, also known as ragi in India, kodo in Nepal, is an annual herbaceous plant widely grown as a cereal crop in the arid and semiarid areas in Africa and Asia. The finger millet or ragi is malted and its grain is ground into flour. The flour is consumed with milk, boiled water, or yogurt. The flour is made into flatbreads, including thin, leavened dosa and thicker, unleavened roti. There are various food recipes of finger millet, including dosa, idli, drinks and laddu. In Karnataka, finger millet is generally consumed in the form of a porridge called ragi mudde in Kannada. It is the staple diet of many residents of South Karnataka. Mudde is prepared by cooking the ragi flour with water to achieve a dough-like consistency. In Tamil Nadu, ragi is called kezhvaragu and also has other names like keppai, ragi, and ariyam.[24] Ragi is dried, powdered, and boiled to form a thick mass that is allowed to cool. This is the famed kali or keppai kali. This is made into large balls to quantify the intake. It is taken with sambar or kuzhambu. For children, ragi is also fed with milk and sugar (malt). It is also made in the form of pancakes with chopped onions and tomatoes. Kezhvaragu is used to make puttu with jaggery or sugar. Ragi is called koozh – a staple diet in farming communities, eaten along with raw onions and green chillies. |

Khoa, khoya, or mawa is a dairy food, originating from the Indian subcontinent, widely used in the cuisines of the Indian subcontinent, encompassing India, Nepal, Bangladesh and Pakistan. It is made of either dried whole milk or milk thickened by heating in an open iron pan. It is lower in moisture than typical fresh cheeses such as ricotta.
Khoa is used in various types of sweets:
Pedha is sweetened khoa formed into balls or thick disks (like patties) with flavourings such as saffron and/or cardamom added.
Gulab jamun, also a round ball sweet made from khoa and then deep fried and soaked in rose water flavoured sugar or honey syrup. A very popular Indian sweet.
Barfi (or burfi) is also flavoured, but khoa is not the only ingredient. Typically, another ingredient, such as thickened fruit pulp or coconut shavings, is added to khoya and slow cooked until the moisture evaporates sufficiently to give the consistency of fudge, so it can be flattened and cut into rectangles, parallelograms or diamond shapes.
Gujia, a sweet dumpling stuffed with khoa.
Halwa is essentially a fudge made by adding khoa to wheat starch or cornstarch and sugar syrup. |

About Gujiya
Gujiya (Hindi: गुजिया), Gughara (Gujarati: ગૂઘરા),Pedakiya (Hindi: पेडाकिया), or karanji (Marathi: करंजी) is a sweet deep-fried dumpling, native to the Indian subcontinent, made with suji (semolina) or maida (all purpose flour) stuffed with a mixture of sweetened khoa (milk solids; also called mawa) and dried fruits, and fried in ghee. The earliest mention of gujiya dates back to the 13th century, when a jaggery-honey mixture was covered with wheat flour and was sun-dried.
The preparation method of a typical gujiya/pedakiya is rather similar to that of a samosa, but the gujiya/pedakiya looks like an empanada. Shaped like a half moon, the gujiya or pedakiya is filled with a sweet mixture of grated and roasted dried fruits, khoa, grated coconut, and a hint of suji to lend it a grainy texture. It is especially made and consumed during Teej, Holi and Chhath in India.
Gujias are prepared in Uttar Pradesh, Rajasthan, Gujrat and Bihar regions of India during Holi and Diwali festivities. Dry ones are called Pedakiya in Bihar. Pedakiyas are very popular in Bihar and are relished by everyone. There it is used as holy offerings in Chhath. There are two types of pedakiya made in Bihar: one with suji / rawa (Semolina) and another with khoa. In suji pedakiya, suji is roasted in ghee with sugar, almonds, cardamom, raisins and other nuts and then deep fried in ghee. In khoa pedakiya, pure khoa is mixed with nuts and sugar and then deep fried. It is also called Ghughra (Gujarati) in Gujarat, Karanji (Marathi) in Maharashtra and in Odisha, Somas (Tamil) in Tamil Nadu, Garijalu (Telugu) in Telangana and, Kajjikayalu (Telugu) in Andhra Pradesh and, Karjikayi or Karigadubu (Kannada) in Karnataka. They are all fried sweet dumplings made of wheat flour and stuffed with dry or moist coconut delicacies. In Goa, Goans prepare a similar sweet on the occasion of their festivals. |

About Mango Crepes
A crepe is a type of very thin, cooked pancake usually made from wheat flour traditionally. Crepes are a French breakfast. They are wonderful wafer-thin French pancakes. The word crepe refers both to the individual pancake and the filled creation. Crepes can be made both sweet and savory. Most of the crepe are filled with vegetables or fruits and then drizzled with some type of syrup. Sometime they are also filled some fruit sauce.
Mango Crepes are made with super thin pancakes rolled up and stuffed with a delicious sweet and slightly sour mango filling. But while the crepe is awesome on its own, it really is about the filling. And by using fresh mangos and whipped cream, you get a super tasty filling. So if you are looking to mix it up for breakfast, these mango crepes should be at the top of the list. A good homemade crepe is soft and pliable so that it can be rolled up.

About Baba Ganoush
Baba ghanoush (Arabic: بابا غنوج, romanized: bābā ġannūj), also spelled baba ganoush or baba ghanouj is a Levantine appetizer consisting of finely chopped roasted eggplant, olive oil, lemon juice, various seasonings, and tahini. The Middle Eastern version consists of onions, tomatoes, or other vegetables. The eggplant is traditionally baked or broiled over an open flame before peeling so that the pulp is soft and has a smoky taste. It is a typical meze ('starter') of the regional cuisine, often served as a side to the main meal and as a dip for pita bread. Eastern Arabian cuisine versions of the dish vary slightly from those of the Levant by spicing it with coriander and cumin; those versions might be minimally spiced and topped with thinly chopped parsley or coriander leaves. |

About Kadhi Samosa
Kadhi or karhi is a dish originating from the Rajasthan. It consists of a thick gravy based on gram flour, and contains vegetable fritters called pakoras, to which dahi (yogurt) is added to give it a bit of sour taste. It is often eaten with cooked rice or roti, pakoras, samosas.
In Northern India, pakoras are added to the gram flour gravy and sour yogurt is added to add flavor to it. They are eaten either with boiled rice or roti. In Gujarat and Rajasthan, it is usually served with khichdi, roti, paratha or rice. It is considered a light food. Gujarati and Rajasthani kadhi differs from the Uttar Pradesh variety. Traditionally, it is a little sweeter than the other variants, because sugar or jaggery is added to it, but it can be made without sugar for a more sour taste. It is eaten without pakoras and its consistency is slightly thinner. The Gujarati kadhi is made ideally from buttermilk, as this gives it a smoother texture compared to yogurt. Variations of this basic dish include the addition of certain vegetables, notably bhindi (okra) in which case it is known as bhinda ni kadhi. In Punjab, kadhi is a simple, quick winter meal. Made from besan (Gram flour) to thicken the consistency, and adding pakoras, it is eaten with either long-grain basmati rice or, more commonly, with a roti. Unlike the rest of India, sour yogurt is not added — just full-fat buttermilk or unsweetened yogurt.
In Western India, especially in Maharashtra, kadhi is made with Kokum which is very famous in Coastal Maharashtra - Konkan with the name of Solkadhi. Other variants of kadhi in Maharashtra are made with Kacchi Kairi (raw mango) which is known as Aambyachi Kadhi (raw mango kadhi) And one more Variant of kadhi in Maharashtra is made of curd and buttermilk which is known as takachi kadhi.
In Purvanchal (eastern Uttar Pradesh) and Bihar, it is called Kadhi-Badi because Pakoda which is added in the kadhi is basically small badi or vadi made simply out of chickpea flour, no vegetables are added to make it a standard pakoda. The name Kadhi is also derived from several Indo-Aryan languages spoken in northern India, in which काढ़ना kadhna means to take out which in this context means to reduce and hence the yogurt and chickpea curry is cooked for a very long time until it is reduced and consistency changes from runny to thick and creamy.
The Sindhi diaspora in India usually make kadhi by first roasting the chickpea flour and adding vegetables to the chickpea gravy. It is called kadhi because of the use of curry leaves, which are called kadhi patta in Sindhi. Instead of yogurt, tamarind pulp is used to give it a sour taste. An alternate way is to make a liquid mixture of the chickpea flour instead of roasting chickpeas.
