This circumstance led her to cultivate an independent mindset and a penchant for self-education, honing her research skills through reading numerous books.

Today, Niti finds herself discontent with the labyrinthine nature of the modern food industry. She is critical of its reliance on technical jargon, unnecessary fees, fines, and the need for costly subscriptions just to earn labels like 'organic.'

One of her key concerns is the counterintuitive pricing of fresh produce at farmer's markets compared to supermarkets. She questions why locally-sourced goods come with a higher price tag, despite supermarkets having to manage considerable overhead costs such as business rates, employees' wages, and extensive advertising. Shouldn't the farmer's market, with its direct farm-to-consumer model, be cheaper?

Beyond just nutrition and food economics, Niti's interests extend to the holistic well-being of individuals. She believes in the interplay of mind, body, and spirit to cultivate true happiness, advocating for a balanced approach to life. This profound conversation sheds light on many intricacies of our modern food system and the path to individual well-being.
