Aloo samosas are a popular Indian snack that are crispy, savory, and filled with a spiced potato filling. Here's how to make them at home:

For the samosa dough:

2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup vegetable oil
1/2 cup water
For the potato filling:

3 medium potatoes, boiled, peeled and mashed
1 tablespoon vegetable oil
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon coriander powder
1/2 teaspoon garam masala powder
1/2 teaspoon red chili powder
1/2 teaspoon amchur powder (dried mango powder)
Salt to taste
1/2 cup frozen peas (optional)
1/2 cup chopped cilantro
Instructions:

To make the samosa dough, combine the flour and salt in a large mixing bowl. Add the oil and use your fingers to rub it into the flour until the mixture is crumbly.

Gradually add water, a little at a time, and knead the dough until it comes together and is smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.

To make the potato filling, heat the oil in a pan over medium heat. Add the cumin seeds and let them splutter.

Add the mashed potatoes, turmeric powder, coriander powder, garam masala powder, red chili powder, amchur powder, and salt. Mix well and cook for 2-3 minutes.

Add the frozen peas (if using) and cook for another 2-3 minutes until they are tender.

Remove the pan from the heat and add chopped cilantro. Mix well and let the filling cool completely.

Divide the dough into 8 equal portions and roll each portion into a ball.

Roll out each ball into a thin circle, about 6 inches in diameter.

Cut the circle in half to form two semi-circles.

Take one semi-circle and form a cone shape, overlapping the two straight edges and pinching the seam to seal.

Fill the cone with 2-3 tablespoons of the potato filling, leaving a little space at the top.

Moisten the inner edge of the cone with water and press it together to seal the samosa.

Repeat with the remaining dough and filling.

Heat oil in a deep frying pan over medium-high heat.

Once the oil is hot, carefully place the samosas into the oil and fry them until golden brown and crispy, turning occasionally.

Remove the samosas from the oil with a slotted spoon and drain on a paper towel.

Serve the samosas hot with chutney or ketchup.
