SPICY MANGO CHICKEN WINGS

24 HRS PREP TIME FOR BRINE
WASH THE CHICKENS WINGS IN COLD WATER BEFORE ADDING THEM TO THE BRINE

Created a brine with 2 quarts of cold water, 6 garlic cloves, 3-4 Thyme (Cuban Thyme) leaves, a teaspoon of lemon juice and ½ cup of sea salt. Add the chicken wings to the brine and leave them in the refrigerator overnight.

USING A FOOD PROCESSOR (OR GRIND OR CHOPPED FINE)
5-7 Habanero Pepper (Alternative options: Chilli Peppers, Ghost Peppers, Black Pepper)
2 large onions
2 chilli pepper
1 Medium - fully ripe Mango (Alternative options: Pine Apple, Peaches, Oranges)
A pinch of salt

24 HRS PREP TIME FOR CHICKEN WING MARINATE

Take the chicken out of the brine and add ¼ of the mix to marinate the chicken and place the chicken wings back into the refrigerator. For best results refrigerate with the seasoning for another 24 hours.

DIPPING SAUCE

Cook the rest of the mix slowly for about 30 minutes, and let it cool down before refrigerating. The dipping sauce can be used as a rub before adding the wings to the BBQ.

OVEN INSTRUCTIONS
Pre-heat at 350 for 30 mins – Bake at 350 degrees and grill on High
1st 20 mins – Bake chicken wings on parchment paper
2nd 20 mins – Place the chicken wings directly on the grill rail and grill on high heat

BBQ INSTRUCTIONS
BBQ for 10 – 15 mins
OR continue grilling the wings in the oven for another 10 -15 minutes until they are fully cooked.
