Ingredients for seasoning Prawns:
1 LB prawns or shrimp - peeled & deveined
1/2 tsp turmeric powder
Salt to taste
Other Ingredients:
2 tbsp cooking/veg. oil
2 dry red chili peppers - crushed
3 cloves of garlic - minced
1 tbsp ginger-green chili paste
1 medium red onion - diced
1 green bell pepper/capsicum - diced
1 tbsp dark soy sauce
1 tbsp water
3 scallions/spring onions - green and white parts cut separately
Cooking Instructions:
Season prawns/shrimp with turmeric powder & salt in a bowl. Set aside
Heat a nonstick sauce pan on medium flame
Once hot add cooking/veg. oil
As soon as oil is hot add crushed red pepper & minced garlic
Stir fry for 30 seconds then add diced onion & bell pepper/capsicum
Sautee for 2 minutes then add soy sauce, ginger-green chili paste
Add green part of the spring onion/scallion
Mix well, add water and stir fry for 2 more minutes
Walla! Your delicious Chilli Garlic Prawns are ready!
Transfer to serving dish/bowl. Garnish with Spring Onion white part

Air Fryer Palak Pakoda Recipe
Ingredients:
200 grams spinach leaves - cut into thin strips/chiffonade
1/2 cup Besan/Chick Peas flour
1 tbsp rice flour
1 tsp cumin-coriander powder mix
1/4 tsp turmeric powder
1 tbsp green chili-ginger paste
1/2 tsp red chili powder
Pinch of garam masala
1/2 tbsp cooking/veg. oil
1 tbsp water
Cooking Instructions:
Preheat Air Fryer to 350* F
In a mixing bowl add all the ingredients listed above
Mix well with hand like kneading a dough to create batter
Set aside for 10 minutes
Next grease Air Fryer pan/tray by brushing it with oil
With a table spoon place spinach batter mixture creating mounds
Air fry for 3 minutes. After 3 minutes remove palak/spinach pakoda
Brush pakodas with oil then air fry them for 3 more minutes
Your Palak Pakodas are ready!
Transfer to serving dish and serve hot with dipping sauce
Easy Dipping sauce:
Mix 2 tbsp ketchup 1 tsp chili paste in bowl. Mix well. Done.

Easy & Delicious Chicken Fry Ingredients:
Main Ingredient:
1kg/2.2 lbs chicken thighs - cut into bite size pcs
Marinade Ingredients:
1 tsp mustard oil
2 tbsp ginger-garlic mince
2 tbsp cumin coriander mix
1/4 tsp garam masala
1/2 tsp turmeric powder
1 tsp red chili powder or to taste
2 tbsp fresh lemon juice
2 tbsp yogurt/curd - whisked
salt to taste
Other ingredients:
3 tbsp veg./cooking oil
2 tbsp chopped cilantro/coriander leaves
Method:
In a bowl add chicken pcs and ingredients listed under Marinade
Mix well, cover & refrigerate for 2 to 4 hours
Remove from fridge 1 hour prior to cooking
In a hot saucepan add cooking/veg. oil
Swirl pan to coat evenly then add chicken pcs
Cook chicken pcs until golden brown - 5 minutes
Cover with lid and cook on low setting for 10 minutes
Open lid, flip chicken pcs to cook other side
Cover & cook for 5 more minutes
Once chicken is cooked open lid garnish with 1 tbsp chopped cilantro
Mix well for a minute
Transfer to serving dish, garnish with remaining cilantro

Ingredients:
2 Tbsp Mustard oil
1 Tsp Cumin seeds
1 Small cinnamon stick
3 Green cardamom pods
3 Cloves
1 Onion - chopped
2 Large coves of garlic - minced
1 Tbsp green chili-ginger paste
1/2 Cup tomato sauce
1/2 Tsp Red chili powder
1/4 Tsp Turmeric powder
1 Tbsp cumin-coriander powder mix
500 Grams White/Button Mushrooms - cleaned, stems removed then sliced
4 Tbsp ground cashew nuts
1/4 Tsp Garam Masala
3/4 Cup water - divided 1/2 cup & 1/4 cup
Slivered (thin) ginger slices
Salt to taste
Cooking Instructions:
In a hot non stick sauce pan heat mustard oil
Once oil is hot reduce heat to medium, add chopped onion
Saute for 2 minutes until translucent then add minced garlic
After 30 seconds add cinnamon stick, green cardamom & cloves
As soon as cumin seeds start spluttering add tomato sauce. Mix well
Next add red chili powder, ground turmeric & cumin-coriander powder mix
Add ground cashew nuts (powder)
Now add white/button mushroom slices
Add salt to taste, mix well
Saute for 2 minutes then stir in 1/2 cup water
Reduce heat to low & simmer for 2 minutes
Now add 1/4 cup water and garam masala, simmer for a minute more

Ingredients:
1 cup uncooked basmati rice - will yield 2.5 cups of cooked rice
2 tbsp cooking oil
250 grams baby bella/brown mushrooms - sliced
100 grams broccoli florets
1 tbsp curry powder
2 tbsp soy sauce
1 tsp chili paste
1/4 tsp sesame oil
3 scallions/spring onions - thinly sliced into roundels
Cooking instructions:
Soak 1 cup of uncooked basmati rice in water for 30 minutes. Drain water
In a pressure cooker cook 1cup of basmati rice with 2 cups of water
Alternative you can cook rice in a sauce pan
Once rice is cooked transfer to plate and let cool for 2 hours or more
Next in a preheated saucepan or wok add cooking oil
Once oil is hot add mushrooms & broccoli. Stir fry for 2 minutes
Season with curry powder. Mix well then add soy sauce & chili paste
Stir fry for 1 more minute than add cooked rice
Mix well so that rice is coated well
Add half the scallions, stir fry for 30 seconds then transfer to serving dish
Garnish with remaining scallion slices

Spicy Tofu - Indian Style Recipe
Ingredients:
400 grams firm tofu - cut into 2 inch bite size chunks
1/2 tsp red chili powder
salt to taste
3 tbsp cooking oil. I used sunflower oil
1tbsp cumin seeds/jeera
1 onion chopped
3 large cloves of garlic - minced
1 red bell pepper/capsicum - diced
1 tbsp green chili-ginger paste
1 tbsp tomato paste
1 tsp coriander-cumin powder mix
1/4 tsp ground turmeric
Salt to taste
1/2 cup water
Freshly chopped cilantro/coriander leaves for garnish
Cooking Instructions:
Season firm tofu pieces with salt & red chili powder in a bowl
In a preheated nonstick saucepan heat 2 tbsp cooking oil
Sear/brown seasoned tofu pieces, about 1 minute per side
Remove tofu from saucepan, set aside
Add 1 more tbsp cooking oil
Once oil is hot reduce heat to medium & add cumin seeds/jeera
As soon as cumin seeds begin to splutter add chopped onion
Stir fry for 2 minutes then add minced garlic
After 30 seconds add red bell pepper/capsicum pieces
Saute for 2 minutes then add green chili-ginger paste
Mix well then add tomato paste & salt to taste

Cucumber Raita Recipe
Ingredients:
2 Cups whole milk yogurt/curd - whisked
1 English cucumber - peeled & shredded
20 Black or other grapes - cut into half
1 Large garlic clove - minced
1 Tsp green chili-ginger paste
1/4 cup fresh mint leaves - roughly chopped
1/4 cup fresh cilantro/coriander leaves - roughly chopped
Salt & crushed black pepper to taste
Prepping Instructions/Method
Whisk yogurt/curd in a serving bowl - set aside
Peel & shred cucumber, spread it on a plate
Add pinch of salt, mix well & set aside
Roughly chop mint and cilantro/coriander leaves
Peel & mince garlic
Assembling Instructions
Squeeze out & discard liquid/water released from the shredded cucumber
Add shredded cucumber to the serving bowl with whisked yogurt/curd
Now add grapes, mix well. Next toss in minced garlic, half of chopped cilantro/coriander and mint leaves

11/5 LBS Ground beef sirloin - 80%Lean, 20*Fat
(You can substitute ground lamb or goat for beef)
1 Red onion - roughly cut into large chunks
2 Large Cloves of garlic
1 TBSP Green chili-ginger mince
1 TSP Salt - add more or less per personal taste
1 TSP Red chili powder
Pinch of Turmeric powder
Pinch of Garam masala
Pinch of Ground nutmeg
1 TBSP Corn starch
3 TBSP Cooking oil/veg. oil
Cooking Instructions
Add all ingredients listed above except cooking oil to a Food Processor
Mix/grind for 2.5 minutes to create Gola kabab mixture
Moist both hands with water and make oval shaped balls size equal size
Once the kabab balls are all done heat a large nonstick pan
Add 3 TBSP cooking/veg. oil to pan
Once oil is hot reduce to medium and place kabab balls to pan
Cook Gola kababs on all sides, for 4 minutes total
Remove cooked Gola kababs to a plate with paper towel to soak up oil

Palak Dal/Dal Palak Recipe
Ingredients:
1 cup Toor Dal/Indian Split Pigeon Peas
2 cups spinach cut into ribbons
2.5 tbsp ghee (Indian clarified butter)
1 onion - chopped
1 green chili - chopped
1 tbsp ginger - minced
2 cloves of garlic minced
1 chopped tomato
1 tbsp cumin seeds
1/2 tsp Asafoetida/Hing
1 tsp red chili powder
1/4 tsp turmeric
1 tbsp cumin-coriander seed powder
salt to taste
3 to 4 cups water to preboil/cook Toor dal
Method:
Boil Toor Dal in ample water in a saucepan until its cooked and tender
Alternatively, you can cook it in a pressure cooker
In a separate preheated nonstick saucepan add ghee
Add cumin seeds. Once they start sputtering add onion & green chili
Next add garlic & ginger, saute for 2 minutes
Once onion is translucent add red chili powder, turmeric powder &
cumin-coriander powder mix
Mix well then add tomatoes. Cook for 2 minutes
Now add cooked Toor Dal, mix well then add spinach
Let simmer for a minute then transfer to serving bowl

2 LBS chicken breast flattened & cut into 2 inch pieces
3 TBSP all purpose flour
Salt & crushed black pepper to taste

1 Cup chicken stock
1 TBSP lemon juice
1 TBSP dry oregano
salt & crushed black pepper to taste
Freshly chopped flat leaf parsley for garnish
Cooking Instructions:
In a bowl dredge/coat chicken with ingredients listed above for it
Set dredged chicken aside for 20 minutes
Next cooking oil to preheated saucepan
Once oil is hot sear/brown dredged chicken pieces for 3 to 4 minutes
Remove seared chicken pieces from saucepan once done, set aside
Next add butter to pan after reducing heat to medium setting
Once butter has melted toss in minced garlic, stir fry for 30 seconds
Now deglaze pan by adding chicken stock, mix well
Add dry oregano, salt & crushed black pepper
Add seared chicken back to the saucepan, mix well, cook for 3 minutes
Adjust seasonings to taste then add some freshly chopped parsley
Mix well & transfer to serving bowl/dish

Spicy Melt In Your Mouth Lamb Shanks-Lamb Shank Curry Recipe:
Ingredients:
2 large Lamb Shanks - About 2 lbs/1kg'
4 tbsp cooking oil
2 star anise
2 small cinnamon sticks
5 cloves
7 whole black peppers
5 green cardamoms
4 red or yellow onions - chopped
4 medium tomatoes - diced
2 tbsp garlic paste
2 tbsp green chilies-ginger paste
2 tbsp ground cumin-coriander powder
1/2 tsp turmeric powder
1 tbsp red chili powder - for heat
1 tbsp Kashmiri chili powder - for color & flavor
1/2 tsp Garam Masala
4 tbsp plain yogurt - whisked
4 cups water
1 tsp salt + more to taste
Cooking Instructions:
Add cooking oil to hot Dutch Oven or large sauce pan
Next add star anise, cinnamon, green cardamom, whole black pepper
Let these spices infuse the oil for 15 seconds then add lamb shanks
Sear lamb shanks on high heat until brown on both sides - 2 minutes per side. Remove seared lamb shanks from Dutch oven/saucepan, set aside
Reduce heat to medium then add chopped onions
Saute them for 3 minutes or until translucent
Add garlic and green chilies-ginger pastes. Mix well
Next add tomatoes letting them cook down for 3 minutes
Toss in cumin-coriander powder, turmeric, red chili powder,
Kashmiri Chili powder & salt. Mix well, reduce heat to low
Now add whisked yogurt stirring it quickly so it does not curdle
Simmer for 2 minutes then add Garam Masala & 4 cups of water
Stir well, cover with lid and simmer lamb shanks for 3 hours
Turn lamb shanks every hour so that both sides cook evenly
After 3 hours gravy will thicken with all the rich juices from the shanks
give it a wonderful flavor and aroma!
By now your lamb shanks will be super tender and melt in your mouth
Remove cooked lamb shanks and set aside
Pour in the gravy form the Dutch Oven/sauce pan into a sieve/strainer
This will get rid of all the whole spices & mushed up onion/tomatoes
Now you will have silky smooth gravy/sauce!
With a ladle pour in the delicious sauce in a serving dish, place 1 lamb shank on top of it in the middle. Finally, pour more sauce over lamb shank

1 onion - roughly chopped

1 inch ginger root - peeled
Ingredients for Tomato Puree:
2 Medium tomatoes - cut into large pcs
Other Ingredients:
1.5 lbs cauliflower florets - soaked in water
1 cup frozen peas - soaked in water
3 tbsp cooking oil for shallow frying cauliflower florets
1 tbsp cooking oil for stir frying onion mixture
1 tsp cumin seeds
1 small cinnamon stick
1 bay leaf
Pinch of Hing/Asafoetida
1.5 tbsp cumin-coriander seed powder
1/2 tsp turmeric powder
1 tbsp red Kashmiri chili powder
1 green chili - sliced lengthwise
1 tsp dry Fenugreek/Methi leaves - hand crushed
1/4 tsp garam masala
1 cup water
salt to taste
Cooking Instructions/Method
Make onion paste by blending ingredients listed for Onion paste. Set aside
Puree tomatoes in a blender. Set aside
Drain water from cauliflower florets & peas. Set aside
In a hot nonstick saucepan add 3 tbsp cooking oil
Once oil is hot shallow fry cauliflower florets for 2 minutes, on medium high. Remove cauliflower from pan, set aside
In same pan add 1 more tbsp cooking oil
Once oil is hot add cumin seeds, bay leaf & cinnamon stick
As soon as cumin seeds begin to splutter add Hing/Asafoetida
Stir fry for 2 minutes then add tomato puree
Next add, cumin/coriander powder, turmeric, Kashmiri chili powder
Mix well then add peas. Cover & cook on medium low for 5 minutes
Now open lid add cauliflower florets, Fenugreek/Methi leaves, garam masala and freshly chopped coriander/cilantro leaves
Mix well, cover with lid and let simmer on low for 5 minutes
Wala! Your delicious Gobhi Matar Masala is ready!
Transfer to serving bowl. Enjoy with Roti, Naan or steamed Basmati rice.

Prawn Ghee Roast Recipe
Ingredients for Prawns Marinade:
500 grams prawns or shrimp - peeled & deveined
1/2 tsp red chili powder
1/4 tsp turmeric powder
1.5 tbsp fresh lemon juice
1/2 tsp salt
Ingredients for Ghee Roast Paste/Mixture:
1 tomato - roughly chopped
1 red onion - roughly chopped
3 large cloves of garlic
1.5 tbsp ginger - peeled & roughly chopped
8 cashew nuts
Other Ingredients:
2 tbsp ghee ( clarified butter)
1/2 tsp cumin seeds
1 large green chili - thinly sliced
1/2 tsp cumin-coriander powder mix
1/2 tsp crushed black pepper
Pinch of red Kashmiri chili powder
4 tbsp water
salt to taste
1 tbsp chopped coriander/cilantro leaves for garnish
Cooking Instructions/Method:
In a bowl add all ingredients listed under Prawns Marinade. Mix well, set aside for 30 minutes
Next add all ingredients listed under Prawns Ghee Roast Paste Mixture
to a blender/mixer. Blend to make thick paste, set aside
Heat a nonstick saucepan to medium flame/setting
Add ghee, as soon as ghee melts add cumin seeds
As soon as cumin seeds start spluttering add green chili slices
Next add ghee roast paste/mixture. Stir fry for 2 minutes
Now add marinated prawns/shrimp to the sauce pan. Mix well
Add cumin-coriander powder mix, crushed black pepper, salt & red Kashmiri chili powder. Mix well to coat evenly then add water
Reduce heat to low, cover with lid and simmer for 4 minutes
Your delicious Prawn Ghee Roast is ready!
Open lid, garnish with coriander/cilantro leaves. Transfer to serving bowl
Enjoy with Naan, Roti or rice. Bon Appetit!

Shish Kebab Recipe
Ingredients For Kebab Mince:
1 LB Mince meat. You can use ground mutton or beef
3 Cloves of garlic
1 Inch ginger root
1 TBSP cumin-coriander powder mix
1 TSP sumac (optional)
1/2 TSP red chili powder
1 TBSP chopped cilantro/coriander leaves
Salt & crushed black pepper to taste
1 Cup water
Ingredients For Salad:
1 small onion - sliced
1 tomato - sliced
1 TBSP lemon juice
1 TBSP - chopped cilantro/coriander leaves
Salt & crushed black pepper to taste
Cooking Instructions/Method
In a bowl add mince meat and all ingredients listed under Kebab Mince
Mix well, cover and refrigerate for 2 hours
Preheat oven to 450* F
Next wet your hands with water and make large balls of mince meat mixture
Press these on a flat skewer to shape as per video
You should yield about 4 long shish kebabs
Place this skewers on a baking sheet/pan and place them in oven
Cook kebabs for 4 minutes then turn them and cook them for 4 more mins
Remove Shish Kebabs from oven, set aside
In a serving dish warm a Naan or other flat bread. Layer it with our salad
Then place 2 Shish Kebabs over it. Enjoy!

First chicken breast pcs are marinated for 4 hours in a yogurt, cream cheese, heavy cream & spice marinade. Next they are put on skewers & oven baked to perfection. Finally chicken kebabs are smothered with butter on both sides. End result: a super tender and delicious chicken kebab that melts in your mouth & tastes fantastic! Main Ingredient:
2 LBS chicken breast pcs cut into 2 inch/bite size pcs
Ingredients For Marinating Chicken
4 TBSP plain yogurt/curd - whisked
3 TBSP - cream cheese - whisked
3 TBSP - heavy cream
1 TBSP - garlic paste or mince
1.5 TBSP - green chili-ginger paste or mince
3/4 TSP - salt or to personal taste
1/4 TSP - white pepper powder
1/2 TSP - ground cardamom seeds
1/4 TSP - grated nutmeg
1/4 TSP - garam masala
2TBSP - chopped cilantro/coriander leaves
Other Ingredient:
4 TBSP Butter for brushing Reshmi kebabs
Cooking Instructions:
Cut skinless chicken breast pcs into bite size/2 inch pcs
Add all ingredients listed above for marinating chicken to a bowl
Mix well, add chicken pcs, cover and marinade for 4 hours
Preheat oven to 375*. While oven is warming up
skewer marinated chicken pcs & place them on an oven proof baking tray
Bake for 10 minutes, brush with butter then flip skewers and bake for 10 more minutes.
Turn the skewers again, brush chicken pcs on the other side
Now increase oven temperature to 400* F and bake for 10 more minutes
Wala! Your tender, juicy & delicious Reshmi Chicken Kebabs are ready!
Transfer to serving dish with dipping sauce. Enjoy with Naan or rice.

Easy Palak Paneer Recipe-Indian Cottage Cheese with Spinach Gravy

Palak Paneer Recipe
Ingredients:
500 grams/1 LB fresh spinach
6 oz paneer - cut into thin rectangle slices
2.5 cups water
2 tbs cooking/veg. oil
1 tbsp butter
2 tbsp ginger-garlic paste
1 tsp whole cumin seeds
1/2 to 1 finely chopped green chili
1/2 red onion - chopped
1/2 tsp ground cumin
1 tsp red chili powder
salt to taste
3 tbsp heavy cream
2 tbsp chopped fresh cilantro/coriander leaves for garnish
Other ingredients:
2 cups ice water
Method
Making Spinach paste/gravy:
Bring to boil water in a saucepan
Add spinach, blanch on medium flame for 2 minutes
Transfer blanched spinach to bowl with ice water
This will stop the cooking process & retain green color of spinach
Next squeeze water from spinach and add to blender/mixer
Grind spinach to a paste
Cooking Palak Paneer:
Heat cooking/veg. oil in saucepan
Add whole cumin seeds & green chili
Once cumin seeds starts popping add chopped onion
Saute until translucent, then add ginger-garlic paste.
Shallow fry mixture for 30 seconds then add spinach paste/gravy
Roast in pan for 3 minutes
Now add salt, red chili powder & ground cumin
Mix well then add paneer slices
Bring to a quick boil then lower flame & heavy cream
Stir in to blend in heavy cream with spinach gravy
Your Palak Paneer is ready!
Transfer to serving bowl & garnish with chopped cilantro/coriander
Enjoy with roti, naan or other India flatbreads

Chicken Tikka Recipe
Ingredients For Preparing Marinade:
4 tbsp hung curd/yogurt
1.5 tbsp fresh lemon juice
2 tbsp mustard oil - if not available use cooking oil
2 tbsp Kashmiri red chili powder
1/4 tsp turmeric powder
1 tsp salt to taste
2 tbsp cumin-coriander powder mix
1/2 tsp red chili powder
1/4 tsp garam masala
1 tbsp ginger-garlic paste
1 tsp dry fenugreek/methi leaves - hand crushed
Other Ingredients:
2 LBS chicken breast - cut into longer pieces
3 to 4 tbsp melted butter
Cooking Instructions:
Prepare marinade by mixing ingredients listed for Preparing Marinade in a bowl. Set aside
Add chicken breast pieces to marinade, mix well
Cover and refrigerate marinated chicken overnight or at least for 6 hours
Preheat oven to 400* F
Remove chicken from fridge 1 hour before cooking
While oven is heating up skewer marinated chicken pieces
Place chicken skewers in a baking sheet lined with aluminum foil
Place in oven for 10 minutes. After 10 minutes turn skewer and cook chicken for 10 more minutes
Remove chicken from oven and brush with melted butter
Place chicken pieces back in oven for 5 minutes at 450* F
Your delicious, tender & juicy Chicken Tikka are ready!
Transfer to serving dish and serve with red onion slices. Enjoy!
