1. One of my favorite food preservation seasons is Cherry Picking Season ... yes, around here when it is time to pick cherries we practically consider it its own season. When cherry season arrives I know it is time to pull out two of my staple food preservation equipment; my boiling water bath canner and my steam juicer. One of the first things I like to do at the beginning of the cherry season is to make cherry juice using a steam juicer. Cherry juice has such great flavor and color. In addition to tasting great on its own, cherry juice can be a lovely juice to add to other juices like apple juice or make into beautiful jelly.

2. Living in Washington State we have access to an abundance of cherries. One of the lovely items we like to make from this fabulous fruit is cherry jelly. I really like to make cherry jelly in the winter because all it takes is cherry juice. So I juice the cherries in the summer and make cherry butter out of the pulp and save the juice to make cherry jelly during the winter months when my time is not quite so busy. It has a beautiful jewel-type quality to it that makes it a wonderful gift to give with a loaf of bread or a fabulous treat to add to your toast in the morning. Today Emmaline and I are going to teach you how to make cherry jelly. The recipe is at the bottom and we hope you find this tutorial helpful.

3. Washington State has many varieties of fruit and they all grow prolifically. Cherries are one of the fruits that grow so well here. Emmaline doesn't have chickens so if she is going to make the effort of juicing she does not want to waste any part of the fruit. Her favorite method of use of the leftover pulp is to make fruit butter. One of her favorite flavors of fruit butter is spiced cherry butter. It is such a great way to not waste any part of the fruit when juicing. Fruit butter tends to be smoother with more spices and less sugar than jam.

To Marie and Emmaline the lost arts are the useful knowledge related to simple living, country living, modern homesteading, and old-fashioned traditions that are not readily being passed down from generation to generation as they used to. It includes sustainable living skills like gardening, canning basics, and homesteading skills. Some of Marie and Emmaline's favorite hard skills include boiling water bath canning, pressure canning, steam juicing, dehydrating, and fermenting our own food to add to our pantries and food storage.

What Are the Lost Arts? Lost arts are the basic skills for self-sufficient living that have been forgotten or replaced by modern technology. --- WISDOM PRESERVED
